Chicken Fried Gourmet's recent post on sweet potato marshmallows made me want to make the chocolate topped strawberry marshmallows I have been thinking about lately. I love making marshmallows, it seems like something that would be difficult, but it really couldn't be easier as long as you have a strong stand mixer and a candy thermometer.
I used Nightscotsman's recipe from egullet. This recipe has probably been made a million times by now. First you dissolve the gelatin in strawberry puree and water. Then you bring sugar, corn syrup, water, and salt to the correct temperature on the stove top. You pour the syrup into the gelatin while mixing at high speed. This could be very dangerous, but luckily it doesn't seem to splatter. You continue to whip it at high speed for another 8-10 minutes.
Then you pour the mixture into a half sheet pan, that has been greased and sprinkled with a half and half mixture of potato starch and confectioners sugar. You could use cornstarch instead of the potato, or all confectioners sugar, but it does not work as well.
You let it sit out overnight to dry and set. The next morning you cut it with a greased chef's knife.
Now you get to dip them in melted chocolate. They are so gorgeous...
I still think my batch of peppermint marshmallows dipped in chocolate last Christmas were the best, but these are a close second.
